Place dates and almonds in a food processor. Process until finely chopped.

Add cacao powder, chia seeds, coconut oil, vanilla extract, and salt. Process until the mixture sticks together.

Scoop out tablespoon-sized amounts and roll into balls.

Store in the refrigerator for up to a week


Vegan Chili with Cacao


Ingredients:

- 2 tablespoons olive oil

- 1 large onion, chopped

- 3 cloves garlic, minced

- 1 red bell pepper, chopped

- 1 yellow bell pepper, chopped

- 2 medium carrots, diced

- 2 celery stalks, chopped

- 1 zucchini, chopped

- 1 can (15 ounces) black beans, drained and rinsed

- 1 can (15 ounces) kidney beans, drained and rinsed

- 1 can (15 ounces) diced tomatoes

- 1 can (6 ounces) tomato paste

- 2 cups vegetable broth

- 2 tablespoons cacao powder

- 1 tablespoon chili powder

- 1 teaspoon ground cumin

- 1 teaspoon smoked paprika

- 1/2 teaspoon ground coriander

- 1/4 teaspoon cayenne pepper (optional)

- Salt and pepper to taste

- 1 tablespoon maple syrup or agave nectar (optional)

- Fresh cilantro, chopped (for garnish)

- Avocado slices (for garnish)


Instructions:

1. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

2. Add the garlic, red and yellow bell peppers, carrots, celery, and zucchini. Sauté for about 7-10 minutes, until the vegetables are tender.

3. Stir in the black beans, kidney beans, diced tomatoes (with their juice), tomato paste, and vegetable broth. Mix well.

4. Add the cacao powder, chili powder, cumin, smoked paprika, ground coriander, and cayenne pepper (if using). Stir to combine.

5. Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for 30-40 minutes, stirring occasionally.

6. Season with salt and pepper to taste. Add maple syrup or agave nectar if you prefer a touch of sweetness to balance the flavors.

7. Once the chili has thickened and the flavors have melded, remove from heat.

Thank you for this information, I will be making the energy balls today with your wonderful cacao. I can honestly say that your cacao is definitely the best I have tasted. I have tried other brands, but this is the best.
